Murgh Makhamali Kebab Recipe - How To Make Spicy And Velvety Chicken Kebabs Recipe



Murgh Makhamali Kebab 
Ingredients :

boneless chicken breasts - 4 or 200 grams each
Ginger & garlic paste - 1 1/2 tsps
Grated processed cheese - 1/4 cup
Fresh cream - 1/4 cup
Yogurt - 2/3 cups
Salt to taste
Garam masala powder - 2 tsps
Lemon juice - 1/2 tsp
Butter - 1/4 cup
Pepper powder -1/2 tsp
Green chillis - according to taste

Preparation method :

  • Clean chicken and remove skin. Cut chicken 
  • Grind green chillis, mix it with ginger & garlic paste & rub this paste well into the chicken. Cover it and keep aside for 20 minutes
  • Drain yogurt with clean muslin cloth for an hour till the water drains and yogurt becomes thick
  • Mix drained yogurt with fresh cream, cheese, garam masala powder, lemon juice, sailt & pepper powder. whisk all these ingredients well and marinate chicken in this mixture for 3 to 4 hours in refrigerator
  • Heat the grilling pan. Skewer chicken pieces and grill them on medium flame 
  • Baste the chicken in between with butter every five minutes while grilling 
  • For grilling in oven, skewer the chicken pieces and arrange them an inch apart on wire rack
  • preheat oven for and grill the chicken for 10 to 15 minutes brushing butter in between
  • Once done remove from skewers and serve hot with green chutney or any chutney of your choice.

Bharwan Bindi Masala Dry - Vegetarian Recipe - Stuffed Ladies Finger (Okra) Recipe

Bharwan Bindi Masala Dry or stuffed okra is easy to prepare and light dish. It can be served as a side dish with rotis or dal & rice or can also be served as a starter. Bharwan bindi can be cooked on special occasions and festivals. You can prepare and store the stuffing in advance and use it when required.

Ingredients : 

Bindi (Ladies finger,okra) - 250 grms
Ginger & garlic paste - 1 tsp
Turmeric powder - 1/2 tsp
Red chilli powder - according to taste
Garam masala - 1 tsp
Salt to taste
Gram flour - 2 tbsps
Peanuts powder - 2 tbsps
Dry grated coconut - 2 tsps
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Lemon juice - 1 tsp
Cumin seeds - 1/2 tsp
Oil - as required
Finely chopped green chillis - according to taste
Finely chopped fresh coriander leaves 

Preparation method : 

  • Wash bindi with water and wipe & dry them with a kitchen towel. Cut the top head and bottom tip of all the okras and make a lengthwise slit from top to bottom. make sure not to cut bindi into 2 pieces. keep them aside
  • For stuffing take gram flour, green chillis, ginger & garlic paste, peanuts powder, cumin powder, coriander powder, red chilli powder, garam masala powder, grated coconut, salt and little oil, mix all these ingredients well.
  • Stuff each bindi with 1/2 tsp of stuffing mixture 
  • Now heat rest of the oil in a pan, add cumin seeds, when they start crackling add stuffed bindis and stir well so that the bindi are coated well with oil. Cover it with lid and cook on low flame. Turn them in between 2 -3 times, so that it cooks well from all sides and to prevent from burning.
  •  Cook till bindi becomes tender.
  • Remove the lid and add leftover stuffing and coriander leaves, mix well and cook it for 5 minutes.
  • Turn off the flame. Serve hot with rice or roti.

Bharwan Aloo (Stuffed potatoes) - Simple And Quick North Indian Vegetarian Recipe

Bharwan aloo (stuffed potatoes)  is popular and unique North Indian dish. It can be cooked for various occasions and served to guests as starters or snacks.

Ingredients :

Potatoes - medium size 6
Paneer (cottage cheese) - 100 gms
Red chilli powder - according to taste
Turmeric powder - 1/4 tsp
Amchur powder(dried mango powder) - 1 tsp
saunf pwder(funnel) - 1 tsp
Oil - 2 tbsps
Garam masala - 1/2 tsp
salt to taste 
Finely chopped green chillis - according to taste
Chopped kishmish(raisins) -2 tsps
Chopped kaju(cashew nuts) - 2 tsp
Chopped fresh coriander leaves - 2 tbsps

Preparation method : 

  • Peel & parboil potatoes
  •  Scoop out the center portion of the potatoes with peeler or knife, leaving a thick round shell. keep them aside 
  • Boil the scooped out portion of potatoes & mash well
  • Add paneer, red chilli powder, turmeric powder, garam masala, saunf powder, amchur podwer, green chillis, salt, kishmish, kaju & chopped fresh coriander leaves. mix well
  • Stuff this mixture in the potatoes 
  • Heat oil in a pan & add stuffed potatoes 
  • Cook potatoes till they become tender.
  • Turn off the flame. Bharwan Aloo is ready to serve
